Weekend Glutton ugh!

Ok so I found out the hard way that after eating clean and pretty strict... it's not good for your belly to CHEAT. Maybe I was tired after finishing my work week sat night, and maybe I was dying for a beer and some nachos. Ok I had a great work week with my buds and even had a wonderfully timed surprise visit by my nephew... But I was still delirious by the time I clocked out for the week. I was craving chicken nachos dripping with cheese and sour cream ...again bar food is going to be the death of me. My rob is always ready and willing to go to the local bar, grab some apps and beers and call it a night. So we made a few phone calls and had friends of ours meet us up there which was soo fun because I don't see them enough and I laugh alot when we hang and act like jackasses. It was great we put some beers down and I even ran into one of my favorite clients!!! Then when we left my Robbie HAD to stop at wawa and get some snacks for home( because I don't keep any around) and in my moment of weakness he talked me into getting a Cadbury egg (which is my demise) and a butter creme egg candy!! Wtf! I've done soo good and I bring these things home. Well guess what.. I gave myself such a guilt trip that they're still sitting on the counter right now. Although I don't completely trust myself with them damn Cadbury eggs ..I'm thinking they're going to take a ride down the garbage disposal which for some reason will be more liberating than just throwing them in the trash.. I'm mental. Either way my stomach was awful today I had pains and bubbleguts, I was afraid to leave the house but it got better throughout the day.

Today I was supposed to have softball practice but that got called off..😢. I made myself a delish spinach omelet with chicken apple sausage (which I'm not sure is paleo due to it being processed) and I made rob a turkey bacon omelet which I didn't tell him it was turkey bacon or he would've never eaten it. Then he promised me if I went on a quote with him, he would take me to lunch to elevation burger since we were out that way. Oh hell yes! I also got a Target trip out of him yay! Later ...and this is always the hard part... dinner and robs moms. They are small people who can eat anything they want without even thinking twice. Did I mention they're Italian and can cook ridiculously awesome? My rob had a heads up that she was making lasagna and she made grilled chicken for me yay... I was grateful but felt soo stupid. Then I couldn't help myself and had a small piece of the lasagna knowing I was going to be in pain later! What is wrong with me? It was killer though.

We are now watching the flyers game at home and I'm trying to cook some food to have for the next couple days ...ya know good choices on hand my friends tell me this is the way to go. So we shall see.  Im making my boyfriends tomato sauce(aka guido gravy), but i added ground organic grass fed beef... wow who am I turning into lol.  I also added some spinach and shredded zucchini.  I plan on just eating it almost like a soup, I added enough beef to make it more like beef w/sauce and veggies, but he cant understand what I plan on doing with it lol.  Also I decided to try and make egg cups from my muffin pan.  I took some good healthy eggs and sauteed up some spinach and whipped them up and poured them into the cups which I greased with coconut oil.  I then took some kind of organic ham steak that said pork raised with no antibiotics or other stuff... whateve... I cut it up and put it in the egg cups and baked them at 350 for 30 min.  Almost done and they look awesome but I just hope they don't taste awful.  I thought they would be great to have on hand for work and on the go.  Just throw at couple in a sandwich bag and run!

So heads up about the egg cups.... used more coconut oil or something better for non stick... I just had to chisel these things off lol, but they still look good.  Anyway... Ive rested two days and my quads are soo sore still from 13.3 ..but I cant wait to get in there tomorrow and WOD.  Just being at my box (Crossfit Aspire) makes me feel good.  Anyone have any paleo quick and easy recipes or ideas to share? please help me out lol!

  1. Meat + spices + coconut milk ( about 1/2 a can, or a whole can, depending on the size of the meat). In a crock pot for 6-8 hours. Store in the fridge with all of the coconut milk/juices (the fat will harden and turn orange). Then, heat up the fat to coat the pan when you are ready to eat it again. This works best with brisket and a bunch of spices ( chili powder/paprika/cumin) or a little jar of Thai Kitchen green or red chili paste instead of dried spices. if you use the paste, heat it up on the stove with the coconut milk and pour the mixture over the brisket before you turn the crock pot on. mmmmm.

  3. I have a recipe for Paleo Meatballs somewhere... I'll have to look it up. Just thought it'd be good for those dinners with the Guidos. there actually really good too!!!
